When on deployment, what does the average day of a fixed wing aircrewman consist of? Is there a good quality of life?

Your days are either flying or non-flying.

On flying days, you'll obviously spend most of it flying. Average flights are anywhere from 8 to 12 hours. You'll come in for pre-flight, fly the mission, post flight, and then head home. You may not be doing the same thing the maintainers are doing, but it's still a long day.

Non-flying days really depend on if you're fully qualified for your position yet. If not, you're spending your time studying. If you're fully qualed though, it's usually your time!
